Georgetown General Manager - Jonathan Joseph
Graduating from the University of New Haven with a Degree in Hospitality and Tourism, Jonathan Joseph gained experience and a readiness for the restaurant industry. He eagerly cut his teeth as the General Manager of a sports cafe in Maryland for two years. Next it was on to C.R.C. where Jonathan has worked diligently and has excelled at operations and day to day strategies in management.

Georgetown Executive Chef - Darrell Hughes
Darrell Hughes , holding an A.A.S. in Culinary Arts from the Culinary Institute of American in Hyde Park, New York in 1990, has worked for Capital Restaurant Concepts ever since. Chef Hughes began his career as a Line Cook at The River Club, and then moved onto the C.R.C. kitchens of Notte Luna. He then was part of the opening culinary staff of Georgia Brown's in July 1993, where he then went on to become a Sous Chef in 1997. Just a year later he was promoted to Executive Chef at Paolo's Ristorante.

Chef Hughes prefers preparing simple dishes with a focus on primary ingredients. He specializes in modern Italian cuisine feature traditional elements such as proscuitto, freshly pressed olive oil, romano & parmesan cheese, and garden-fresh, minced herbs.

Chef Hughes entered into the culinary profession to create fine dining delights for discriminating palettes. His Executive Chef role with C.R.C. is a very rewarding one; allowing him to pass on experiences and techniques to other motivated and up-and-coming culinary professionals.

A firm believer in the importance of participating in the community, Chef Hughes looks forward to annual events such as "Share Our Strength's Taste of the Nation" and "Zoofari" charity galas. Chef Hughes was invited to prepare Italian dishes using organic ingredients for the Italian Trade Commission - an event serving over 3,000 people. He was also featured in a PBS culinary special where he prepared dishes now featured on the Paolo's menu.

In March of 2004, Chef Hughes took over the reigns of C.R.C.'s renovated seafood concept, Fin, located near the Dupont Circle area. However, the Low Country cuisine of Georgia Brown's has always held a special place in Chef Hughes' heart and he returned to that high volume, high profile restaurant, heading the culinary program.

Now, as Executive Chef of the flagship J. Paul's in Georgetown, Chef Hughes is adding his unique flavor, years of experience and great taste to the kitchen and the menu.

When he's not in the kitchen, Chef Hughes enjoys time with his son, playing the drums and guitar, as well as traveling around on his 21-speed mountain bike.

Harborplace General Manager - Jody Seader
Energetic, eager and talented, Jody Seader brings over eighteen years of industry experience to CRC. Over two of those years have been spent at Paolo's Harborplace in management. Here, Jody was always on hand to motivate staff and entice guests with his sparkling personality. At the same time, he kept tabs on inventory, budgets and tracking profits and losses.

Jody also brings his talent as a Certified Trainer to the staff. He formerly conducted classroom training and testing for Rusty Scupper servers and bartenders. Further experience in Jody's past put him in the role of General Manager and Chef at Jimmy G's in Glen Burnie, MD. Here, he not only recruited and trained employees, but was also in fact in charge of creating daily specials.

With all of the certification, training, management skills and diverse experience under his belt, Jody has seamlessly transitioned into the role of General Manager at J. Paul's in the Harbor. We are proud and confident with Jody at the helm.

Harborplace Executive Chef - Bill McPartland
Chef Bill McPartland has come full circle in his CRC tenure over the last two years. Beginning in 2005, Chef McPartland joined the CRC family as a Sous Chef at J. Paul's in Baltimore's inner Harbor. From there, he was off to make the rounds in the kitchens of not one, but three Paolo's locations! We are proud to welcome him back to J. Paul's Harborplace, leading the kitchen as Executive Chef.

Hailing from Pennsylvania, Chef McPartland has a long history in the kitchen. He cut his chops at Steak and Ale in Bethlehem while learning the ins and outs of standards, costs and inventory management. Shortly thereafter, he rose to prominence at Spats Cafe and Speakeasy where created nightly feature dishes as well as savory stocks and sauces.

Finally, before joining the CRC family, Chef McPartland acted as Crew Leader at The Corner Room in State College, PA. Here he not only organized training and scheduling, but also used his culinary talents with the creation of specials and soups.
